Walla Walla Sweet or Vidalia Onion diced

Garlic cloves, diced fine

Vegetable Oil (Crisco)

Tomatillos OR 2 c fresh Tomatillos husked and diced

chopped Fire Roasted Green Chiles

Jalapeno Pepper, seeded, stem and veins removed and diced

Salt and Pepper to taste

green Tomatoes, diced fine

Saute the onion and garlic in the oil until the onion is clear. Add the tomatillos, chiles, jalapeno and green tomatoes.

Pour the entire mixture into a food processor and pulse to make a coarse puree.
|

Return the mixture to the pan. Add the sugar and the salt and simmer over low heat for 30 minutes, until the sauce is thick. Cool and place in the refrigerator for 8 hours to let the flavors marry.
